Ingredients: 1 large eggplant, sliced into rounds. 4 burger buns. 1 cup breadcrumbs. 1/2 cup grated Parmesan cheese. 2 eggs. 1 cup marinara sauce. 4 slices mozzarella cheese. 1/4 cup fresh basil leaves. Salt and pepper to taste. Olive oil for frying.
Instructions: Salt the eggplant rounds and put them on a paper towel. Let them sit for 15 minutes to get rid of extra water, and then use another paper towel to dry them. Mix the Parmesan cheese and breadcrumbs in a small bowl. Mix the eggs in a different bowl. First, coat each round of eggplant in the egg mixture that has been whisked together. Set a pan on medium heat and add the olive oil. Fry the eggplant rounds until both sides are golden brown. Take it off and let it dry on paper towels. In the skillet, toast the burger buns until they get a little brown. Spread marinara sauce on the bottom bun of each burger, then top with a round of eggplant, a slice of mozzarella cheese, and a few basil leaves. Put the other half of the bun on top. Do this again for each burger. Put the burgers together in the pan and cover it with a lid. Just keep cooking for a few minutes or until the burgers are hot all the way through and the cheese melts. Add your favorite sides and serve hot.
