Portobello mushrooms, bell peppers, onions, and savory spices are all mixed together in these vegan fajitas to make them taste great. They're full of flavor and texture, so you can eat them without meat and still feel full.
Ingredients: 4 large Portobello mushrooms, stems removed and sliced. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 green bell pepper, sliced. 1 onion, sliced. 2 tablespoons olive oil. 2 cloves garlic, minced. 2 teaspoons chili powder. 1 teaspoon cumin. 1 teaspoon smoked paprika. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 8 small whole wheat or corn tortillas. Optional toppings: avocado slices, salsa, chopped cilantro, lime wedges.
Instructions: Warm up the olive oil in a big pan over medium-low heat. Slice the onions, bell peppers, and mushrooms and add them to the pan. Stirring every now and then, cook for about 8 to 10 minutes, or until the vegetables are soft. To the pan, add smoked paprika, chili powder, cumin, salt, and black pepper that has been chopped up. Mix things together well. Allow the flavors to blend for another two to three minutes. Follow the directions on the package to warm the tortillas. Spread the mushroom and pepper mix out evenly on each tortilla. You can serve it with avocado slices, salsa, chopped cilantro, and lime wedges as toppings. Have fun with your meatless fajitas!
