Ingredients: 1 cup chickpeas, cooked and drained. 1/4 cup tahini. 2 tablespoons lemon juice. 1 clove garlic, minced. 1/2 teaspoon cumin. Salt and pepper to taste. 4 whole wheat tortillas. 1 cup baby spinach leaves. 1/2 cucumber, thinly sliced. 1/2 red bell pepper, thinly sliced. 1/4 red onion, thinly sliced. 1/4 cup Kalamata olives, pitted and sliced. 1/4 cup feta cheese, crumbled. 2 tablespoons fresh parsley, chopped. 1 tablespoon olive oil.
Instructions: In a food processor, combine chickpeas, tahini, lemon juice, minced garlic, cumin, salt, and pepper. Blend until smooth, adding a little water if needed to reach your desired consistency. Warm the whole wheat tortillas in a dry skillet or microwave for about 20 seconds to make them pliable.
