Ingredients: 1/4 cup paprika. 1/4 cup firmly packed brown sugar. 3 tablespoons black pepper. 2 tablespoons garlic powder. 2 tablespoons onion powder. 2 teaspoons cayenne pepper. 1 tablespoon dried oregano. 1 tablespoon dried thyme. 1 tablespoon celery salt. 2 racks of baby back ribs.
Instructions: In a bowl, mix paprika, brown sugar, black pepper, garlic powder, onion powder, cayenne pepper, oregano, thyme, and celery salt to create the rub. Remove the membrane from the back of the ribs for better flavor penetration. Generously rub the spice mixture over both sides of the ribs. Wrap the ribs in plastic wrap and refrigerate for at least 2 hours, or overnight for more flavor. Preheat your smoker to 225F 107C. Place the ribs in the smoker and cook for 4-5 hours or until the internal temperature reaches 190F 88C, basting occasionally with apple juice. Let the ribs rest for 10 minutes before slicing. Serve and enjoy!
