Mentaiko Udon is a tasty Japanese pasta dish made with chewy udon noodles and a creamy, spicy mentaiko sauce. This recipe takes the rich umami flavors of mentaiko and combines them with the comforting texture of udon noodles to make a tasty and filling meal.
Ingredients: 2 packs of fresh udon noodles. 200g mentaiko spicy marinated cod roe. 2 tablespoons soy sauce. 1 tablespoon mirin. 1 tablespoon sake. 1 tablespoon butter. 2 tablespoons chopped scallions. Toasted nori seaweed for garnish.
Instructions: Follow the directions on the package to cook the udon noodles. Remove the water and set it aside. Take the mentaiko out of its bag and put it in a bowl. Put in sake, mirin, and soy sauce. Combine well. Set a pan on medium heat. Put in the butter and let it melt. Put the mentaiko mix into the pan. Stir the sauce slowly for one to two minutes, until it gets a little thicker. Cook the udon noodles and add them to the pan. Slowly toss the noodles in the sauce until they are covered. Put some udon noodles in each bowl to serve. On top, put chopped scallions and toasted nori to look nice. Enjoy while hot!
