They both had a knack for languages, both constructed and natural, and so they'd of course built their own.
The first iteration was somewhat accidental, but somehow they understood one another perfectly. Kathy trusted Guinan when it came to choosing her drink; she came in each morning, laid five dollars on the counter, and drank whatever was given to her.
A mocha meant 'you look upset', and a plain latte, no sweetener, meant 'get some sleep'. An Americano meant 'you work too hard' and weak drip coffee meant 'I'm still mad at you'. A single shot, perfectly pulled, just meant 'hello', and a red eye, made from beautifully cold-brewed coffee and a shot that complimented it meant 'you look beautiful today'.
The ordering, the cups and spoons, that was Kathy's way of returning a message. Bringing in her own travel mug meant 'I'm so busy, sorry I've been quiet', and to-go without the lid was 'still busy but I am making time for you' -- she'd lean against the counter to talk until she'd drunk enough to make it safe to travel. To-go with a stirrer in the lid meant 'we're fighting but I'll be back'. A cup for here meant 'I want to spend more time with you' and one with a saucer and a real spoon meant 'all I want to do is watch the way you move, the grace in your hands and the passion in your step'.
When they actually talked it was about everything and nothing -- it was the language that mattered. English meant little, but French meant 'I want to make you smile', and German meant 'tell me everything, I'm sorry it's happening, I'm listening'. Mandarin was 'you have my undivided attention' -- or sometimes 'I need your undivided attention' -- and Russian meant 'I'm sorry, you're right, I'm so sorry'.
They learned new languages so they could say other things; Bengali meant 'kiss me, I want you to kiss me', and Arabic meant 'I want so much more than a kiss, close the shop and take me upstairs'. Sindar meant 'you are an enormous nerd and it's my favorite part of you'. Esperanto meant 'I am about to say something important', and it was almost always a declaration of love.
The pastries, well, they meant nothing. Sometimes you just wanted a damn croissant. But everything else was part of their relationship, and they wouldn't have it any other way.

Links coming soon, but 1 idea I love is pick your fave muffin/cupcake recipe, a little batter in the bottom, then a marshmallow (or several small ones), then top with more batter. Marshmallow dissolves, leaving sweet space in middle. Yum.

The first time they meet, she is young and he is Curzon. He is not overly fond of children but images had been a passable diversion while the Bactricans had kept him and her father waiting. It was interesting to see how she'd grown, and it was nice to see his friend's daughter decimate the competition at a school function. She barely noticed him, too caught up with her friends and her success to manage more than a polite handshake before she put him out of her mind.
Then, of course, they met professionally, when the Voyager was just setting sail and she was Jadzia. She'd meant to mention that she'd known the Captain's father, but there wasn't much time to socialize and everyone thought the ship'd be back in port a few weeks later. That didn't happen, of course, and though there were communications back and forth from time to time Jadzia was gone before Voyager made her way back to the Alpha Quadrant.
It wasn't until she was an Admiral and she was Ezri that they had time to talk. The promotion'd been nice, but Kathy was never one for desk jobs and with every vacation she pushed out a little further, looking for new experiences, places where no one knew her name or rank and the conversation was good.
So they met in a bar, and Ezri called her Kathy without thinking, and it all came out, the unspooling of a dozen coincidences and near misses, and they became dear friends in half a dozen days and twice as many cups of coffee.
They kept on meeting, in stranger places, though now it was planned. The back edge of a moor on a strange moon with too much oxygen but no one for miles to hear them; the private club at the back of a rather disreputable station that took a bit of a reputation to get an invitation for; the Klingon bar in neutral space they nearly got thrown out of, until Kathy managed to break someone's hand with a lucky move and a bar stool. ("Hoch DIl loD'vam," Ezri added, casually, and after that no one bothered them.)
It doesn't matter, much, which one passed on first. It was the end of an era, and after that they never saw each other again. This time, though, there was a chance to say good-bye, and there were memories, the kind that live on, long past this mortal coil.
