Just because you don't have an oven, doesn't mean you can't make delicious gluten-free meals! The other day, I whipped up some gluten-free pasta in the microwave and it turned out great. I added some herbs, olive oil, and tomato sauce for my sauce, and topped it off with some vegan parmesan from @followyourheart. To round out my meal, I added a salad with an easy balsamic vinaigrette. Who says microwave meals can't be delicious and healthy? 🍝🥗 Ingredients: 1 cup gluten-free pasta 2 cups water 1/4 teaspoon salt Instructions: In a microwave-safe bowl, add the gluten-free pasta, water, and salt. Microwave on high for 10-12minutes. Check the pasta for doneness. Drain the past of excess water....leave a little in there to help the sauce. Then I added my tomato sauce spices olive oil stirred it in and microwaved for an additional 1-2 minutes. Serve and enjoy! Note: The cooking time may vary depending on the type of gluten-free pasta you are using and the wattage of your microwave.
