This Japanese Microwave Jello Mochi recipe makes it easy and quick to make tasty mochi that tastes fruity from the gelatin filling. It's a cheerful treat that can be used for any event.
Ingredients: 1 cup mochiko glutinous rice flour. 1/4 cup sugar. 1 cup water. 1 package flavored gelatin mix such as Jello. Cornstarch for dusting.
Instructions: Put mochiko, sugar, and water in a bowl that can go in the microwave. Mix until it's smooth. Put plastic wrap over the bowl and heat it on high for two minutes. Take it out of the microwave slowly and stir it. Put it back in the microwave for two more minutes. Let the dough cool a bit, then knead it until it is smooth and stretchy. Clean a surface and sprinkle it with cornstarch. Make a thin layer of the mochi mix by rolling it out. Follow the directions on the package to make the flavored gelatin mix. Separate the mochi into little squares. Then, put a spoonful of ready-made gelatin around each square. To seal the mochi around the gelatin, pinch the edges together. Do it again with the rest of the gelatin and mochi. Put it in the fridge until it sets. Serve and have fun!
