These banana donut holes are delicious and can be eaten for breakfast or dessert. They're soft and fluffy, and they smell and taste like ripe bananas and vanilla. The glaze gives it a little sweetness that goes well with the mild spices.
Ingredients: 2 ripe bananas, mashed. 1 cup all-purpose flour. 1/4 cup almond milk. 2 tablespoons maple syrup. 1 teaspoon vanilla extract. 1 teaspoon baking powder. 1/2 teaspoon cinnamon. 1/4 teaspoon salt. 1/4 cup powdered sugar. 1 tablespoon almond milk for glaze. 1/2 vanilla bean, seeds scraped out.
Instructions: Preheat oven to 350F 175C. In a mixing bowl, combine mashed bananas, flour, almond milk, maple syrup, vanilla extract, baking powder, cinnamon, and salt. Mix until smooth. Scoop tablespoon-sized portions of the batter onto a baking sheet lined with parchment paper, forming small balls. Bake in the preheated oven for 12-15 minutes, or until golden brown and cooked through. While the donut holes are baking, prepare the glaze. In a small bowl, whisk together powdered sugar, almond milk, and scraped vanilla bean seeds until smooth. Once the donut holes are done baking, let them cool slightly before dipping each one into the glaze, ensuring they're evenly coated. Serve warm and enjoy!
