These Milo cupcakes are a quick and easy treat that you can make without an oven. They are moist, chocolatey, and perfect for Milo lovers.
Ingredients: 1 cup all-purpose flour. 1/2 cup Milo powder. 1/2 cup granulated sugar. 1/4 cup vegetable oil. 1/2 cup milk. 1/2 teaspoon baking powder. 1/4 teaspoon baking soda. 1/4 teaspoon salt. 1 egg. 1 teaspoon vanilla extract.
Instructions: In a mixing bowl, whisk together the flour, Milo powder, sugar, baking powder, baking soda, and salt. In a separate bowl, beat the egg and then add the vegetable oil, milk, and vanilla extract. Mix well. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; lumps are okay. Line a microwave-safe cupcake tray with paper liners or use silicone cupcake molds. Divide the cupcake batter evenly among the liners, filling each about 2/3 full. Microwave the cupcakes on high for 2-3 minutes each, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool for a few minutes before removing them from the molds. Once cooled, you can optionally frost them with your favorite frosting or sprinkle extra Milo powder on top.
