Ingredients: 1 cup canned pumpkin puree. 1/2 cup unsweetened applesauce. 1/4 cup honey or maple syrup. 1/4 cup brown sugar. 2 large eggs. 1 tsp vanilla extract. 1 cup whole wheat flour. 1/2 cup oat flour. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 tsp ground cinnamon. 1/2 tsp ground nutmeg. 1/4 tsp ground cloves. 1/4 tsp ground ginger. 1/4 cup low-fat plain Greek yogurt. 1/4 cup skim milk. 1/4 cup chopped walnuts optional. 1/4 cup mini chocolate chips optional.
Instructions: Preheat your oven to 350F 175C. Line a muffin tin with cupcake liners. In a large mixing bowl, combine the pumpkin puree, applesauce, honey or maple syrup, brown sugar, eggs, and vanilla extract. Mix until well combined. In a separate bowl, whisk together the whole wheat flour, oat flour, baking powder, baking soda, salt, and spices cinnamon, nutmeg, cloves, and ginger. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the Greek yogurt and skim milk until the batter is smooth. If desired, fold in chopped walnuts and mini chocolate chips for extra flavor. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
