On a hot summer day, these kiwi mojito popsicles are the perfect way to cool off. You can taste the fresh kiwi, lime, and mint in them, and the coconut water gives them a touch of tropical sweetness. They're also not alcoholic, so the whole family can enjoy them.
Ingredients: 4 kiwis, peeled and sliced. 1/4 cup fresh lime juice. 2 tablespoons honey or agave nectar. 1/4 cup fresh mint leaves, chopped. 1 cup coconut water.
Instructions: In a blender, combine the kiwis, lime juice, honey or agave nectar, and chopped mint leaves. Blend until smooth. Pour in the coconut water and blend briefly to combine. Divide the mixture evenly among popsicle molds. Insert popsicle sticks and freeze until solid, about 4-6 hours. Once frozen, remove the popsicles from the molds and enjoy!
