So I'm going over hilll over dale to try and find a pumpkin using the Swiftgale ring w/ EE. Melons come later since those are only in chests in abandoned mineshafts. In my search I've managed to generate a lot of new land, and in that new land I've managed to spawn up a Fortress. (Found by using Minutor) What's odd is that I already had a fortress spawn pretty close to me that I found via the Eye of Ender method.

I'm torn to go through it because unlike the other, closer, one this one isn't destroyed halfway through thanks to abandoned mineshaft generation. But it was interesting to see it generate in the first place, didn't think that would happen to be honest.

Now to try and get a cross breed...
