It was time to clean out the fridge before some veggies went bad and tacos were the end result. You’ll notice that the guacamole from our story last night didn’t make it to onto the tacos lol. I love making different versions of taco “meat” with ingredients you may not think to use. Last night we had shiitakes, green bells, heirloom tomatoes and walnuts all chopped up and sautéed together with cumin seeds, smoked paprika, and ancho chili powder. There was even a splash of beer in there for good measure😊 And that sauce!!!!! Blistered padron peppers, cashews, nooch, and lime juice. Sooooo good!!!!Topped off with black beans I made earlier in the week for meal prep, cilantro and homemade flour tortillas. Those tortillas are so fun to make. I’ll take any excuse to make and knead dough.
