Herbed biscuit pot pie. One pot, lots of veggies, fluffy biscuits. A southern spin on a winter time classic. Check out the recipe below🌱💜✨ ————————————————- Filling: Olive oil 5 of each: carrots, celery, creamer potatoes, diced 1 onion 4 cloves of garlic, sliced 1 container mushrooms, chopped 1 tsp red pepper flake Salt & pepper 1 can full fat coconut milk 1 tsp smoked paprika 1/2 cup frozen peas 1 tbsp arrowroot 1 tbsp water Biscuits: 2 cups all purpose flour 1 tbsp baking powder 1 tsp salt 2 tbsp herbs (thyme, rosemary) 5 tbsp earth balance butter Approx 1 1/2 cup non dairy milk For the filling: Preheat a large cast iron skillet over medium heat. Add all ingredients except peas, arrowroot and water to skillet. Cover and cook for 7-10 minutes until tender. Whisk together arrowroot and water in a small container and set aside. For the biscuits: Preheat oven to 450F Cube 4 tbsp earth balance butter and place in the freezer while you gather the other ingredients. Melt remaining 1 tbsp of butter. Combine flour, baking powder, salt and herbs in a separate bowl. Whisk together. Add cold, cubed butter to flour mixture. Cut in butter with your hands or a fork until it resembles sand. Stir in milk, starting with 1 cup. Add more as needed. The batter should not be overly wet. Be sure to not over stir. When filling it tender, stir in frozen peas and arrowroot slurry. Drop biscuits on to prepared filling. Brush tops with the melted butter. Bake 12-15 minutes.
