What kind of cheese?
I used mozzarella today, but I have some cheddar in the fridge that I am going to try tomorrow. Oh, and make sure your bread is sturdy. Do not use wimpy, crumbly white bread...
(Cheddar cheese and basil pesto is another AWESOME grilled cheese combo BTW..) What made me think of this one, was the fact that I wanted spinach dip for lunch, settled for spinach hummus, and when I walked by the bread table in the bakery, the lights went off in my brain. It was a tasty experiment. I’m glad it worked!
