i made food! tamagoyake (egg sushi). it turned out surprisingly well, for how tricky the websites warned it would be. uploading progress images, with hodgepodged recipe below:
egg (mostly from this guide):
thoroughly mix together 4 eggs, 4 teaspoons of sugar, 1/2 teaspoon of salt, and 1 teaspoon of soy sauce. like super thoroughly; no lumps
strain mixture through fine mesh to remove any pieces of egg membrane (optional, but makes it easier i think). easiest to strain into measuring cup for easy pouring
pour thin layer of egg into sprayed frying pan (medium-low heat)
when edges start to firm up, fold over two sides and start rolling egg in (think burrito fold). i saw videos of people doing this with chopsticks. i’m not quite there, but chopsticks + spatula does the trick, if awkwardly. don’t wait for the middle to cook, just go with it. some may spill out of the open end, and that’s fine
slide roll over to side of pan (spatula really helps for this part)
pour another layer of egg to the open end of roll, and repeat the fold-over-and-roll from before
continue until about half of the egg mixture is used up (this mix makes two rolls), remove roll onto plate, and repeat for second half
sushi rice (i mostly followed the directions on the rice):
microwave 2 tablespoons of seasoned rice vinegar for 20 seconds, then stir in 1 teaspoon sugar and 1/2 teaspoon salt (because “seasoned” isn’t really seasoned enough). set aside for later
half-heartedly rinse 1 cup sushi rice in water(short grain rice)
soak the rice in 1 1/4 cup water for ~10 minutes
high heat until water starts boiling, then cover and set on low heat to simmer for 20 minutes (prepare egg during this time)
remove from heat and rest with lid still on for 10 minutes (cook egg during this time)
transfer to plastic bowl, and use plastic rice paddle to stir and cool rice
sprinkle and stir in rice vinegar mixture
to assemble, just wet hands and form rice into little sushi nugget, then slice the egg roll and place on top. i ate it when everything was lukewarm and it tasted great, but i imagine hot or cold would be fine too.
