anyway, what up, I’m Mo, I make stupid shit when I’m left alone because people in the house are like 90% of my impulse control
mac and cheeeeese babey
sushi rice
ingredients:
2 cups small or medium grain white rice
2 cups water
1/3 cup rice vinegar
1 tbsp salt
1.5 tbsp sugar
directions:
rinse rice until water runs clear
pour rice and water into rice cooker
while rice is cooking, mix rice vinegar, salt, and sugar together until dissolved
when done, move rice to a large bowl
pour vinegar solution over rice and stir until mixed
let cool until rice is warm to the touch (about 20-30 minutes)
use to make sushi :D
pancakes for one !!1!!!1!
yes yes i'm back just archiving recipes on my blog in case the originals get lost to the sands of time. consider it the modern version of a recipe box :D
ingredients
1 cup all-purpose flour
1 tsp baking powder
1/2 tbsp sugar
1 (flax) egg
3/4 cup oat milk
1/4 tsp vanilla extract
butter or cooking spray to grease pan
instructions
mix dry ingredients
in a separate bowl, mix wet ingredients
pour wet into dry ingredients and mix until combined
you'll probably have to add more milk after it's combined to thin out the batter
add an obscene amount of chocolate chips or anything else you put in your pancakes (note to self i would add less than an obscene amount of chocolate chips next time)
pour batter into a greased pan on medium heat and flip when you start seeing bubbles
notes: makes 4-5 large pancakes, probably 6-8 small ones
from one dish kitchen
tempura batter
ingredients
50g or 1/3 cup cornstarch
35g or 1/4 cup flour
10g or 2 tbsp rice flour
3g or 1 tsp baking powder
1/2 cup sparkling water
neutral oil for frying
vegetable(s) and/or protein(s) of choice
instructions
heat 1-2 inches of oil in a pot to 350F
mix dry ingredients together, then add sparkling water and stir until there's no lumps
batter vegetables/proteins and fry until crisp
lay on a paper towel to cool and absorb excess oil
from the viet vegan
the mashed potatoes ever
ingredients
6-8 medium potatoes (yukon gold for creamy texture, idaho for fluffy texture)
1 1/2 tsp salt
1/2 tsp black pepper
5-6 cloves roasted garlic (i just use one whole head; to roast, peel outer layers and wrap in foil. place in the oven [either on the rack or on a pan] and roast at 350°F for 55 minutes)
3 tbsp softened vegan butter
1/4 cup chives (optional)
instructions
in this house we peel our potatoes, but y'know do whatever you want. if you choose not to peel them, cut the potatoes in half. if you peel them, leave them whole. put them in a pot and cover them in 1 inch of water
bring to a light boil over high heat and add 1 tsp salt. cook for 25-30 minutes, or until fork tender
once tender, drain the potatoes and place them back into the pot for 1 minute to evaporate any remaining water
mash the potatoes until fluffy
add in butter, roasted garlic, 1/2 tsp salt, and black pepper. stir until combined
top w/ chives if you got 'em
i love squeezing the roasted garlic and then accidentally burning my hands
quite literally this recipe written down and narrated slightly differently by yours truly. i'm bored. my family is always asking me to make this stuff trust me it's so fucking good
