A couple of months ago my wife remembered a pastry she used to get from a bakery in years past. It had long since closed up shop, and she did her best to describe the pastry from memory, not knowing it’s name. Relentless Google searches brought her to something called mocha roll cake, which yields a few results like you see here. I’ve never had or seen the original she remembers, but his is what I was able to pull together. It’s a vanilla angel food cake roll with raspberry jam, coated in shredded coconut and topped with mocha butter cream. Finished with a gentle dollop of more raspberry jam.
