Ingredients: 2 cups all-purpose flour. 1 cup brown sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 cup almond milk. 1/2 cup vegetable oil. 1/4 cup applesauce. 2 tsp vanilla extract. 1/2 cup vegan butterscotch chips.
Instructions: Preheat the oven to 350F 175C. Grease and flour a bundt cake pan. In a large mixing bowl, combine the flour, brown sugar, baking powder, baking soda, and salt. Add almond milk, vegetable oil, applesauce, and vanilla extract to the dry ingredients. Mix until well combined. Fold in the vegan butterscotch chips. Pour the batter into the prepared bundt cake pan. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Once cooled, optionally dust with powdered sugar before serving.
