Indulge in the rich flavors of Moldova with this hearty beef stew infused with the robust essence of Moldovan Merlot wine. Tender beef simmered in a savory broth with aromatic vegetables, this dish is a celebration of comfort and warmth.
Ingredients: 2 lbs beef stew meat, cubed. 2 tbsp olive oil. 1 large onion, chopped. 2 cloves garlic, minced. 2 carrots, peeled and sliced. 2 celery stalks, sliced. 1 cup red wine from Moldova preferably Merlot. 2 cups beef broth. 1 can 14.5 oz diced tomatoes. 2 bay leaves. 1 tsp dried thyme. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add beef cubes and brown on all sides. Remove and set aside. In the same pot, add chopped onion and garlic. Saut until softened. Add carrots and celery, cook for another 5 minutes. Return beef to the pot. Pour in Moldovan red wine and beef broth. Add diced tomatoes, bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, stirring occasionally. Once the beef is tender and the stew has thickened, remove bay leaves. Adjust seasoning if necessary. Serve hot, garnished with fresh parsley. Pair with a glass of Moldovan Merlot and enjoy!
