Why Is Lemon Water Bitter?

Perillartine, a Potential Sweetener

Perillartine, also known as perillaritin and perilla sugar, is a super semisynthetic sweetener with 2000 times the sweetness of table sugar/sucrose and 10 times saccharin. Perillartine is characterized by high-sweetness, non-toxic, and non-caloric, which is not involved in metabolism in the body. It is mainly used as a cigarette flavor improver.

To compensate for the poor water solubility and bitter taste, scientists reported analogs to the perillartine, Oxime V. The sweetness of Oxime V is 450 times higher than sucrose, which is more soluble in water than perillartine. Therefore, Oxime V has the potential to become a new sweetener.
