The wine is made from grapes of Mtsvane, Chkhaveri and Tsolikauri grown in areas of Eastern and Western Georgia.

Harvested crops are sorted, separated from the ridges and carefully pressed. Thermostatic alcoholic fermentation takes place in steel tanks at a controlled temperature.

Secondary fermentation according to the Sharma method is carried out in sealed pressure vessels. Wine of straw color with elegant perlage.

Kisi wine is a rather rare autochthonous technical variety cultivated in a limited area in one of the best wine-producing regions of the country - Kakheti. It belongs to the varieties of the late ripening period and is a natural hybrid of such native Georgian varieties as Mtsvane and Rkatsiteli.

Kisi is considered as very moody grape,which is characterized by low productivity and poor resistance to diseases and pests. it is a real feat even for the most experienced craftsmen to cultivate it.                                                         Kisi wine is prepared using two technologies: traditional Kakheti and fashionable European.

Kakheti technology provides for late harvesting, fermentation of the wort along with the pulp in clay qvevri buried in the ground, as well as aging of wine material on peels and bones. As a result, the finished drink acquires characteristic tart notes and is saturated with healthy flavonols. Such a wine can be recognized by its rich golden hue, velvet aroma and balanced taste with notes of apples and spices The European technology for the preparation of Kisi wine is that the fermentation of wine material takes place in steel tanks after the grape juice is completely separated from the peels and seeds. Thus, the Kisi wine produced by the European method has a light, citrus aroma and a moderately fruity taste with mild acidity. In addition, it is characterized by a lighter shade than the Kakheti Kisi, which is explained by the lack of prolonged contact of the juice with the pulp.

Rkatsiteli grape variety is one of the most common in Georgia, originally from the village of Tsinandali in the Telavi region, but most of all cultivated in Kakheti, where it is planted as a technical crop. In Georgian, Rkatsiteli is a “red berry”, although in fact grapes are among the white wines.

Mtsvane - This is an ancient Georgian grape variety that is rightfully considered one of the most valuable technical white varieties. Mtsvane, which means “green” in Georgian, was obtained by the green color of the berries. This color grapes retains until full maturity. Mtsvane is best blended with Rkatsiteli, the wine obtained as a result of such mixing is one of the most popular throughout Kakheti.
