In this vegan version of honey-glazed salmon, king oyster mushrooms are used instead of the fish. The dish is sweet and savory, with a great smoky flavor. Ideal for vegans who want to taste salmon without giving up their vegan lifestyle.
Ingredients: 4 large king oyster mushrooms, sliced lengthwise. 1/4 cup soy sauce. 2 tablespoons maple syrup. 1 tablespoon olive oil. 1 teaspoon liquid smoke. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. 1/4 teaspoon ground black pepper. 1/4 cup water.
Instructions: In a small bowl, whisk together soy sauce, maple syrup, olive oil, liquid smoke, garlic powder, onion powder, black pepper, and water to make the glaze. Heat a non-stick skillet over medium heat. Place sliced mushrooms in the skillet and cook for 2-3 minutes on each side until golden brown. Pour the glaze over the mushrooms and cook for another 1-2 minutes, allowing the glaze to thicken and coat the mushrooms. Remove from heat and serve hot, garnished with sesame seeds and green onions if desired.
