So a year or so ago when I was replaying Ocarina of Time, I came to the conclusion (and wondered how I never saw it before) that in order to become Sages, all of the sages had to die. What I mean by that is that Saria, Darunia, etc. had to all die and transcend life before becoming an eternal sage. It makes sense when you think about it-Saria went to save the meadow and died at the hands of monsters. Darunia went to fend of Volvagia and died. You see Ruto in the water temple, but when you follow her up, she's gone. Again, death by monsters. Impa tried to seal Bongo back up, was killed. And Naboruu was killed by the twins after you defeat her as a kunckle.
I don't know if it's canon or not, but I totally believe it's true. Plus, the fact that they can't come back and live with people, because they're sages-because they no longer have a physical body on earth.
Also, I know that this theory is already in high dispute among zelda fans. But I still wanted to contribute my two cents. :)
