Ingredients: 2 cups coconut sugar. 1/2 cup water. 1/2 teaspoon peppermint extract. Natural food coloring optional. Paleo-friendly powdered sugar, for dusting optional.
Instructions: Line a baking sheet with parchment paper and set aside. In a saucepan, combine the coconut sugar and water over medium heat. Stir until the sugar dissolves completely. Once the mixture begins to boil, reduce the heat to low and let it simmer without stirring until it reaches 300F hard crack stage on a candy thermometer. Remove the saucepan from the heat and stir in the peppermint extract. If using natural food coloring, add it at this stage and mix well. Carefully pour the hot candy mixture onto the prepared baking sheet, spreading it out evenly with a spatula. Allow the candy to cool and harden completely at room temperature. Once hardened, break the candy into pieces using a mallet or the back of a spoon. Optional: Dust the candy pieces with paleo-friendly powdered sugar for a festive touch. Store the Christmas rock candy in an airtight container at room temperature.
