Ingredients: 1 cup almond flour. 1 cup gluten-free all-purpose flour. 2 cups almond milk. 2 tablespoons maple syrup. 1 teaspoon vanilla extract. Pinch of salt. 3 ripe nectarines, sliced. Vegan butter or oil for cooking.
Instructions: In a mixing bowl, combine almond flour, gluten-free all-purpose flour, almond milk, maple syrup, vanilla extract, and a pinch of salt. Mix until smooth. Heat a non-stick skillet over medium heat and lightly grease it with vegan butter or oil. Pour a small ladleful of the batter onto the skillet and swirl it around to spread evenly. Cook for 2-3 minutes until the edges start to brown. Carefully flip the crepe and cook for another 1-2 minutes on the other side. Repeat with the remaining batter. Serve the crepes warm, topped with sliced nectarines. Optionally, drizzle with extra maple syrup.
