South Indian crepes made with rice and coconut are called Neeru dosa or Neer Dosa. It's very soft and light, so it's great for breakfast or a light meal.
Ingredients: 1 cup rice. 1/2 cup grated coconut. Salt to taste. Water.
Instructions: Wash the rice thoroughly and soak it in water for about 3-4 hours. Drain the soaked rice and place it in a blender. Add grated coconut, salt, and enough water to make a thin batter. Blend until smooth. Heat a non-stick pan or a crepe pan on medium heat. Pour a ladleful of the batter onto the hot pan and quickly spread it in a circular motion to make a thin crepe. Cover the pan with a lid and let it cook for about 1-2 minutes or until the edges start to lift off the pan. Gently remove the neeru dosa from the pan and repeat the process with the remaining batter. Neeru dosa is ready to serve. Enjoy it with your favorite chutney or curry.
