Ingredients: 8 oz pasta. 1 cup cherry tomatoes, halved. 1 cup cucumber, diced. 1 cup bell pepper, diced. 1/2 cup red onion, finely chopped. 1/4 cup black olives, sliced. 1/2 cup grated Parmesan cheese. 1/4 cup mayonnaise. 1/4 cup sour cream. 2 tablespoons lemon juice. 1 clove garlic, minced. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Cook pasta according to package instructions until al dente. Drain and rinse under cold water. In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, and black olives. In a small bowl, whisk together grated Parmesan cheese, mayonnaise, sour cream, lemon juice, minced garlic, salt, and pepper until well combined. Pour the creamy Parmesan dressing over the pasta and veggies. Toss until everything is evenly coated. Cover and refrigerate for at least 1 hour to allow flavors to meld.
