So there are 3 types of flour, cake, AP, and bread. Cake flour is like… 5% gluten, so you use it for cookies and cakes and brownies if you have it, bread flour is 10% gluten, so its better for bread because there more gluten to be developed for a good bread, if you have it, and AP flour is regular ass flour that is about 7-8% gluten, in the middle, so you can use it for anything

I do know the difference between them, but I don’t know what qualitative difference wil is gonna see in the bagels if he uses ap flour instead of bread flour
