One easy and comforting way to make chicken is to cook it in a pot with vegetables that are full of flavor. This recipe is easy to make because it only needs a few steps and cooks everything in one pot, which makes cleanup a breeze.
Ingredients: 1 whole chicken about 3-4 pounds. 4 carrots, peeled and cut into chunks. 4 celery stalks, cut into chunks. 1 onion, quartered. 4 cloves garlic, smashed. 2 bay leaves. 1 teaspoon dried thyme. Salt and pepper to taste. 4 cups chicken broth or water.
Instructions: Before you start cooking, heat the oven to 375F 190C. Sprinkle a lot of salt and pepper on the inside and outside of the chicken. Put the chicken in a big pot or Dutch oven that can go in the oven. Arrange the chicken with the celery, onion, garlic, bay leaves, and thyme. Put enough chicken broth or water in the pot to cover half of the chicken. Place the pot in an oven that has already been heated and cover it with a lid. It should be baked for about an hour and a half, or until the chicken is done and the vegetables are soft. Before you serve, take the pot out of the oven and let it rest for 10 minutes.
