These bacon-wrapped scallop sushi rolls are a mix of Japanese sushi and Western flavors. The savory bacon and juicy scallops wrapped in nori and sushi rice make for a great combination.
Ingredients: 6 large scallops. 6 slices of bacon. 6 nori sheets. 2 cups sushi rice, cooked. Soy sauce, for dipping. Wasabi, for serving. Pickled ginger, for serving.
Instructions: Preheat oven to 400F 200C. Wrap each scallop with a slice of bacon. Cut nori sheets into strips wide enough to wrap around each scallop. Place a strip of nori on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori. Place a bacon-wrapped scallop on the rice and roll it tightly. Repeat with the remaining scallops. Place the sushi rolls on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the bacon is crispy and the scallops are cooked through. Slice each roll into bite-sized pieces. Serve with soy sauce, wasabi, and pickled ginger.
