Instructions: Cook sushi rice according to package instructions. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Drizzle over cooked rice and mix gently to incorporate. Let rice cool to room temperature. Place a nori seaweed sheet on a sushi mat, shiny side down. Spread a thin layer of sushi rice evenly over the nori, leaving a small border around the edges. Arrange cucumber, avocado, and imitation crab meat in a line across the rice. Using the sushi mat, tightly roll the nori sheet around the filling ingredients. Seal the roll by moistening the edge of the nori with water. Repeat with remaining ingredients to make additional rolls. Using a sharp knife, slice each roll into bite-sized pieces.
