Instructions: Rinse sushi rice in a fine-mesh strainer until the water runs clear. In a rice cooker or pot, combine rice and water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat and simmer covered for 18-20 minutes. Let it sit covered for 10 minutes after cooking. In a small saucepan, combine rice vinegar, sugar, and salt. Heat over low heat until sugar and salt dissolve. Remove from heat and let it cool.
