Recently I went to a local chain restaurant and ordered a roasted vegetable quinoa bowl. It had salad greens, quinoa, carrots, sweet potatoes, red onion, Brussels sprouts, black beans and cilantro-walnut pesto. The concept of the bowl seemed like it would work well. Sadly it was not executed well and was very bland. I was so disappointed. Well I decided I would replicate the meal and this is what I came up with. It was very tasty. Isn't it funny that things you totally disliked as a kid, you like now? That's how it was for me and figs. I bought some fresh figs and used them in this sandwich. I made a rosemary cream cheese. I used a combination of Kitehill ricotta and Trader Joe's vegan cream cheese. I spread that on one side of 2 slices of bread. I buttered the other sides. I cooked sliced figs and apples in vegan butter. No added sugar. I also made a small batch of caramelized onions. Put it all together and cooked it until the bread was toasted. I was feeling in the mood for some curry and needed to use the kabacha squash I had sitting around. I found what I thought to be a decent yellow squash curry recipe and made a few substitutions based off of what I had on hand. It turned out really well. I was at the farmers market and picked up some baby eggplants because they were so cute. When I was thinking about how to prepare it, I didn't want to go with the usual red pasta sauce or slice thin and fry/bake or cube and fry/bake. I decided on making it hassleback style. I did my usual recipe search to see how others made it. Research is everything. I decided to slice the eggplant lengthwise and stuff mozzarella in between the slices. I coated each eggplant with an oil infused gremolata and baked it for about 40 min. The mozzarella melted by the time I took it out, but I was okay with that. I made an arugula pesto and tomato basil sauce using cherry tomatoes. This was one of those dishes where you cross your fingers a pray that it tastes good because you've never made it before. I took one bite and knew this was a keeper. What I like best about the whole thing is you can make it all in an hour.
