On a grocery run earlier, I picked up some Pillsbury Flaky Layers Sweet Hawaiian Biscuits. You know, the ones in the pop out can! Yeah yeah, I'll get to learning to making biscuits from scratch one day. But it made me want chicken biscuits so I made them! - Biscuits: Pop them in the oven according to the package. When chicken was almost ready, I opened them up & put cheddar cheese on them & put them back in the oven for a few minutes - Chicken: Seasoned chicken thighs w/ salt/pepper/paprika & let marinate in pickle juice for a bit. Removed & dried off. Dredged in flour/egg wash/panko. (Seasoning all 3). Put in hot oil & fried up. Removed & then flash fried at higher temperature. CRUNCHY! - Plated up: Put chicken on biscuit. Added yellow mustard/mayo & a pickle. - Result: You know that shit was goddamn deelish! I had 2 w/ 2 leftover for tomorrow. See? There are things to look forward to in life during a pandemic. FOOD! So easy to do.
