Hi, I am going to start taking packed lunches to school but need some suggestions on healthy options. What do you think?
Firstly bring lots of fruit and veg. At least half of your lunch should be made up of it - sticks of carrot/celery/pepper etc. are really good and you can bring some hummus or peanut butter to dip them in for some added protein and flavour :) with peanut butter and hummus though make sure that you stick to the serving amount - although they're healthy, if you're not careful with how much you eat the calories add up fast. One serving is usually around 2 tablespoons. I would then recommend having some sort of protein/carbohydrate combination - chicken or egg on a whole wheat wrap or whole wheat bread is good. Skip the mayo though - it's basically just thickened oil. Add some avocado instead, plus some spinach or other salad leaves for extra crunch and vitamins. I really like to eat wraps with black beans, salsa and low-fat cheddar, I think they're delicious :) that might just be me though. I'm guessing you're not going to want to eat the same thing every day, so change it up! Maybe one day bring in carrot sticks with hummus and a chicken and avocado wrap with some berries as a kind of desert; another day celery sticks, peanut butter, a smoked salmon and cream cheese (low fat and watch the serving size) sandwich and an apple; and another you could have whole-grain crackers with guacamole, a hard-boiled egg and some greek yoghurt with honey. To be honest there are tons of possibilities, be creative! I hope these ideas helped :)
