IHOP restaurants began National Pancake Day in 2006. Since that day, they have raised close to $30 million for charities. On February 27, 2018, people from around the country will once again celebrate National Pancake Day at IHOP restaurants and enjoy free pancakes. Guests are asked to consider leaving a donation.

Use any pancake batter recipe. Divide batter into two bowls. Set one bowl aside. In the other bowl, drop 4-6 drops of each color randomly across the top. Using a toothpick or edge of a knife, carefully swirl the drops without overmixing.
Using a 1/4 measuring cup, scoop out the batter and drop onto a hot griddle. Fry your pancakes as you normally would. As the batter in the first bowl begins to get muddy, add some of the uncolored batter to create definition. You can add a few drops of color if it seems thin. Repeat until gone. Add fruit puree, whipped cream and syrup.
