So finally we finished our Nutcracker themed cake! With ideas and the cookie cutter from @lakelanduk and a weird mash up of Christmas cake and Betty Crocker box mix vegan hack. We haven't tasted it yet but I'm so so happy with how it's turned out! I think I'd like to try doing fondant icing and cookie icing more often. Oh for some energy! I've had quite a few people laughing that I'm finishing my Christmas cake in January, but I didn't have the energy or the time to do it previously. As it is, it's taken four or five separate days to get it made and finished.
