Ingredients: 2 cups unsweetened shredded coconut. 1 cup sunflower seeds. 1 cup pumpkin seeds. 1/2 cup dried cranberries. 1/2 cup chopped dates. 1/2 cup coconut oil, melted. 1/2 cup honey. 1 teaspoon vanilla extract. 1/2 teaspoon cinnamon. Pinch of salt.
Instructions: Preheat your oven to 300F 150C and line a baking sheet with parchment paper. In a large mixing bowl, combine shredded coconut, sunflower seeds, pumpkin seeds, dried cranberries, and chopped dates. In a separate small bowl, whisk together melted coconut oil, honey, vanilla extract, cinnamon, and salt. Pour the wet ingredients over the dry ingredients and stir until everything is well combined and evenly coated. Transfer the mixture onto the prepared baking sheet and press it down firmly to form a compact layer. Bake in the preheated oven for 25-30 minutes or until golden brown and slightly crispy around the edges. Remove from the oven and let it cool completely before cutting into bars. Once cooled, slice into bars and enjoy!
