A filling and nutritious meal, this dish of mixed beans in a tasty tomato-based sauce is hearty and flavorful.
Ingredients: 2 cups mixed beans kidney, black, pinto. 1 onion, finely chopped. 2 cloves garlic, minced. 1 bell pepper, diced. 1 cup corn kernels. 1 can diced tomatoes. 1 teaspoon cumin powder. 1 teaspoon smoked paprika. Salt and pepper to taste. 2 tablespoons olive oil. Fresh cilantro for garnish.
Instructions: Rinse and soak the mixed beans overnight. Cook until tender. In a large skillet, heat olive oil over medium heat. Saut chopped onions and minced garlic until fragrant. Add diced bell pepper and corn kernels, cook until softened. Stir in cooked beans, diced tomatoes, cumin powder, smoked paprika, salt, and pepper. Simmer for 15-20 minutes, allowing flavors to meld. Adjust seasoning to taste. Serve the savory bean mixture over rice or quinoa. Garnish with fresh cilantro before serving.
