Indulge in the creamy delight of homemade rocky road ice cream filled with mini marshmallows, crunchy nuts, and decadent chocolate. This classic frozen treat is perfect for satisfying sweet cravings on hot summer days.

Ingredients: 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 1 teaspoon vanilla extract. 1/2 cup mini marshmallows. 1/2 cup chopped nuts such as almonds or walnuts. 1/2 cup chopped chocolate or chocolate chips.

Instructions: In a mixing bowl, whisk together heavy cream, milk, sugar, and vanilla extract until sugar is dissolved. Pour the mixture into an ice cream maker and churn according to manufacturer's instructions until it reaches a soft serve consistency. Stir in mini marshmallows, chopped nuts, and chopped chocolate during the last few minutes of churning. Transfer the ice cream to a freezer-safe container, cover, and freeze for at least 4 hours or until firm. Serve scoops of homemade rocky road ice cream in bowls or cones. Enjoy!

Even though we had planned for today to be our last day of the season, we couldn’t make it. We were sold out yesterday (actually Friday) and hence have nothing to sell. So it will be the end of two seasons of operating minimally. We only did curb side pickup of pints for these two seasons and managed to barely survive. We lost a lot of customers who wanted more than pints but we also gained many new customers who appreciated the fact that we put people before profits. This is what sets us apart from other Ice Cream shops. We make all our ice creams but we make it with all Natural ingredients. Today we toasted Hazelnuts and then made Hazelnut Butter which we folded into our dark chocolate ice cream. It took about and hour where as if we had used Hazelnut flavor it would have been a 10 minute job. Same with Ginger which we hand peel and purée. It’s not a mystery that potential business purchaser are scared as they think that we have big shoes to fill. We were recently blessed with our first and only Grand Child. Mom, Dad and the little Guy are doing great and settling in their home. Our Grand Pup is very excited to have a little brother too. On February 1st 1988, We signed a lease for this place located on East Greenwich St., right around the corner from Jumbar’s Cafe in Bethlehem, Pa. The Monthly Rent was $500 per month to start for what was essentially a two car garage. In spite of some not so well wishers who told us we will be out of business in six months we managed to stay here for eight years. In February 1996, My wife and I purchased the former Kostas Drug Store after being turned down by multiple local banks. However, several kind people helped us find financing to purchase this property where we have thrived for the last 25 years. We built a good retail and wholesale business to allow us to educate our children, help our families and travel the world. However, it is now time for us to pass the baton to the next dreamer- I say that and the rest additional information above as advice to chase your dreams - don’t give up and learn to persevere.
