Ingredients: 1 cup all-purpose flour. 1/2 cup almond flour. 1/4 cup cocoa powder. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp ground cinnamon. 1/4 tsp ground ginger. 1/4 tsp ground nutmeg. 1/4 cup coconut sugar. 1/4 cup maple syrup. 1/2 cup unsweetened applesauce. 1/4 cup almond milk. 1/4 cup melted coconut oil. 1 tsp vanilla extract. 1/4 cup chopped dried fruits such as raisins, apricots, or dates. 1/4 cup chopped nuts such as almonds, walnuts, or pecans.
Instructions: Preheat the oven to 350F 175C. Grease a non-stick muffin tin or line with parchment paper. In a large mixing bowl, whisk together the all-purpose flour, almond flour, cocoa powder, baking powder, baking soda, cinnamon, ginger, nutmeg, and coconut sugar. In another bowl, mix together the maple syrup, applesauce, almond milk, melted coconut oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped dried fruits and nuts. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean. Allow the nonettes to cool in the muffin tin for 5 minutes, then transfer to a wire rack to cool completely.
