Enjoy the classic flavors of Nutter Butters with this one that doesn't have gluten. These cookies are great for people who don't eat gluten because they are full of peanut butter goodness.
Ingredients: 1 cup creamy peanut butter. 1/2 cup granulated sugar. 1/2 cup packed light brown sugar. 1 large egg. 1 teaspoon vanilla extract. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup gluten-free all-purpose flour.
Instructions: Warm the oven up to 175F 350C. Put parchment paper on the bottom of a baking sheet. Put peanut butter, white sugar, and brown sugar in a large bowl and mix them together until they are well mixed. It will be smooth after you add the egg and vanilla extract. Put in the gluten-free all-purpose flour, baking soda, and salt. Mix it all together until a dough forms. As you prepare the baking sheet, roll the dough into 1-inch balls and space them out 2 inches apart. Press down gently on each dough ball with a fork to make a crisscross pattern. Put it in the oven for 10 to 12 minutes, or until the edges turn golden brown. Let the cookies cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way.
