This Brussels Sprout Salad with Apple Maple Vinaigrette is a delightful blend of fresh Brussels sprouts, sweet apples, crunchy pecans, and tangy feta cheese, all drizzled with a flavorful apple maple vinaigrette. It's a burst of flavors and textures in every bite!
Ingredients: 12 oz Brussels sprouts, trimmed and thinly sliced. 1 large apple, thinly sliced. 1/2 cup chopped toasted pecans. 1/4 cup dried cranberries. 1/4 cup crumbled feta cheese. 1/4 cup red onion, thinly sliced. For the Vinaigrette:. 1/4 cup apple cider vinegar. 2 tablespoons pure maple syrup. 2 tablespoons extra-virgin olive oil. 1/2 teaspoon Dijon mustard. Salt and black pepper to taste.
Instructions: In a large mixing bowl, combine the sliced Brussels sprouts, apple slices, toasted pecans, dried cranberries, crumbled feta cheese, and red onion. In a separate small bowl, whisk together the apple cider vinegar, maple syrup, olive oil, Dijon mustard, salt, and black pepper to make the vinaigrette. Pour the vinaigrette over the salad ingredients and toss well to coat everything evenly. Let the salad sit for about 10 minutes to allow the flavors to meld. Serve the Brussels Sprout Salad with Apple Maple Vinaigrette as a side dish or add grilled chicken or shrimp for a complete meal. Enjoy!
