These Cool Ranch Chicken Tacos made in the crockpot are a quick and easy weeknight meal that tastes great. Ranch seasoning mix and chicken broth are used to cook the chicken slowly in the crockpot. The meat is tender and full of flavor. Everyone in the family will love these tacos, which are topped with ranch dressing, melted cheddar cheese, and fresh cilantro.
Ingredients: 1.5 lbs chicken breasts. 1 packet ranch seasoning mix. 1 cup chicken broth. 1 cup shredded cheddar cheese. 1/2 cup ranch dressing. 1/4 cup chopped fresh cilantro. 12 small flour tortillas. Optional toppings: diced tomatoes, shredded lettuce, sour cream.
Instructions: In a crock pot, put chicken breasts. Place the ranch seasoning mix on top of the chicken. Chicken broth should be put into the crockpot. It should be cooked on low for 6 to 8 hours or high for 3 to 4 hours, until the chicken is soft and can be shred easily. Use two forks to shred the chicken after it's done cooking. Add the ranch dressing and shredded cheddar cheese and mix well. Put the lid on top and cook on low for another 15 to 30 minutes, until the cheese melts and the mixture is hot all the way through. Follow the directions on the package to warm up flour tortillas. Put the chicken mix on top of the warm tortillas. Add chopped cilantro and any other toppings you'd like on top. Serve right away and enjoy!
