Gluten Free Toasted Oat Muffins with Granola Clusters - Available to Everyone!
Healthy Banana Oatmeal Muffins-Easy & Delicious
Oats, applesauce, blueberries, and a crunchy walnut oat streusel make these muffins taste great. You can eat them for breakfast or as a snack.
Ingredients: 1 cup old-fashioned oats. 1 cup unsweetened applesauce. 1/2 cup brown sugar. 1/4 cup vegetable oil. 1 egg. 1 cup all-purpose flour. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 cup fresh or frozen blueberries. 1/2 cup chopped walnuts. 1/4 cup rolled oats. 2 tbsp brown sugar. 2 tbsp cold butter, diced.
Instructions: Warm the oven up to 175F 350C. Put grease in a muffin tin or use paper liners to line it. Put the oats, applesauce, brown sugar, vegetable oil, and egg in a large bowl and mix them together. Mix the flour, baking powder, baking soda, and salt together in a different bowl. Mix the dry and wet ingredients together until they are just mixed. Add the blueberries and chopped walnuts slowly. Mix the brown sugar, rolled oats, and cold diced butter together in a small bowl. You can mix it with a fork or your fingers until it turns into a crumbly streusel topping. Put some batter into each muffin tin and then top each one with streusel. In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean.
