These PB and J Baked Steel Cut Oat Cups are a tasty and easy-to-carry snack or breakfast that is keto-friendly. They are a healthy and filling choice because they are full of fiber, healthy fats, and protein.
Ingredients: 1 cup steel cut oats. 2 cups almond milk. 2 tablespoons chia seeds. 1/4 cup natural peanut butter. 2 tablespoons low-carb sweetener such as erythritol or stevia. 1/4 cup sugar-free raspberry jam. 1 teaspoon vanilla extract. Pinch of salt.
Instructions: Set the oven to 350F 175C and heat it up. You can grease a muffin tin or put cupcake liners inside it. Steel cut oats, almond milk, chia seeds, peanut butter, sweetener, vanilla extract, and salt should all be mixed together in a bowl. Mix well. Fill each muffin cup with an equal amount of the oat mixture. Make a hole in the middle of each oat cup with a spoon and fill it with a teaspoon of sugar-free raspberry jam. After the oven is hot, bake the oat cups for 25 to 30 minutes, or until they are set and slightly golden. Let the oat cups cool down a bit before you serve them. Feel free to eat it hot or cold.
