How cool is this hack 🙌 - discovered by the College of Chemical Sciences in Sri Lanka and presented at the National Meeting & Exposition of the American Chemical Society (ACS)! White rice tends to be much lower in arsenic (toxic heavy metal) and nutrient-blocking phytates than brown rice! And it’s so versatile too! However it’s high in digestible starches that are quickly converted into glucose - giving you a sugar spike (followed by a crash afterwards🤨). Excess glucose is also turned into fat, adding to those extra kilos on the waist. It can also feed the “bad” gut bacteria, yeasts and molds (🤢 yuk!) in the intestines. Researches found that simply cooking your white rice with coconut oil converts that digestible starch in rice into a new variety - resistant starch (RS) - a much healthier type of starch, that has been researched for numerous health benefits 🙏. RS is an indigestible type for our bodies and does not cause a sugar spike. Instead - RS is food for our “good” gut bacteria - a prebiotic food, contributing to a balanced gut flora. Studies have also linked RS to enhanced insulin sensitivity, weight loss, decreased fat storage and reduced appetite. Here’s how you can do this (based on the study): 🔸 Add 2 tsp (or more) coconut oil to boiling water. 🔸 Add a cup of white rice (we choose organic to reduce the chances of arsenic contamination). 🔸 Boil for 20 min or until ready. 🔸 To boost the benefits - refrigerate the rice for 12 hours in the fridge right after boiling and reheat it the next day. This boosts the content of RS by 10 times (reheating does not reduce it either). This doesn’t mean that you can load on white rice three times a day folks as it will still raise the blood sugar. 😊 ✨ Tip: add 2-3 tbsp @OrganicBurst Chia into the pan at the end of your cooking for more energy, better digestion and sugar-busting benefits.
