You made my dream a reality

When I started this truck, my biggest ambition was not money.  My biggest motivation was to share Okinawan soba with my community.  To bring together the two places I call home.  I grew up on Okinawa and my heart will always be attached to that beautiful little island.  But I've spent most of my adult life in Tampa and that is my home and I love it.  I wanted the people of Tampa to be able to share in one of the most simple but comforting dishes from Okinawa -- Okinawan Soba.  One taste of that soba takes me back.  It instantly brings comfort to my soul and body. It brings me such gratitude and satisfaction when we go out in the truck, and customers and friends ask me for that soba, Some say its addicting.  Others say there is some secret ingredient that make them crave it.  It truly is "Okinawan Feel Good Food".  I can't pretend to know the secret.  I know it has to  have perfect balance, just the right amount of salty in the soup.  Just the right amount of sweetness in the meat.  Just the right amount of tenderness in the noodles.  And a bit of ginger for spice, scallion for freshness and a dash of togarashi (Japanese red pepper) to set it off.  When all of these things align and the right amount of love and soul are added, then you can experience the great comfort of Okinawan Soba, what I call Ma-san Soba.  Each time you try our Ma-san, you are making my dream a reality and I thank you.
